For the broth

  • 2 tbsp sesame/vegetable oil
  • 2 cloves garlic, crushed
  • 1/2 tsp ginger, grated
  • 1/2 medium-sized onion, finely chopped
  • 4 cups of water
  • 1 stalk celery, chopped
  • 1/2 medium turnip, chopped (optional)
  • 1/2 cup shitake/brown mushrooms, chopped (optional)
  • 1/2 small red chilli
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1/2 head tatsoi/pakchoi (leaves whole) or 1/2 cup swiss chard chopped


  • 1/2 packet ramen noodles (35g)
  • 1 soft boiled egg
  • Spring onions, chopped
  • Sesame seeds (optional)
  • Grated carrots

  1. Add oil to a medium-sized saucepan on moderate heat. Add garlic, ginger and onion and fry for 2-3 minutes until soft and fragrant, stirring often to avoid burning.
  2. Add the water, soy sauce, salt, chilli, mushrooms (if using) & vegetables (except tatsoi/pakchoi/swiss chard).
  3. Bring the mixture to a boil then reduce the heat and simmer for 15 minutes.
  4. Taste and adjust brother to your liking by adding more soy sauce, salt or chilli.
  5. Gently place the noodles in the broth and simmer for 3 minutes; then add the tatsoi/pakchoi/swiss chard to the saucepan to wilt it.
  6. Carefully transfer just the brother to a bowl first and then spoon in the vegetables and noodles.
  7. Finish with the egg & any other toppings of your choice.
